Superbly fresh, organically grown in Ontario. Lion's mane (Hericium erinaceus) is the white, shaggy mushroom that grows on hardwoods, and it is an important resource of our local flora, alongside reishi, chaga and turkey tail.
Dried, it has a gentle scent and a light, almost spongy texture. It grinds beautifully in a coffee grinder for cooking or infusing. Rehydrated, it regains a meaty texture reminiscent of crab or lobster — a delight in the kitchen.
Common uses:
- Rehydrate 15 minutes in warm water, squeeze, then pan-fry in butter or oil
- Ground, added to a soup, a broth, a sauce, a coffee or a latte
- Infused: 1 tablespoon of crushed mushroom per cup of hot water, 10 minutes
- Organically grown in Ontario
- Dried at low temperature
- Store dry, away from light
