Organic shiitake, grown in Ontario, sliced and dried. Drying concentrates its fragrance: woody, smoky, with that umami depth that has made shiitake famous in kitchens around the world.
The slices are thin and light; simply rehydrate them and they regain a meaty, flavourful texture — and the soaking water becomes a delicious broth you should never throw away!
Common uses:
- Rehydrate 20 to 30 minutes in warm water, squeeze, then cook: stir-fries, soups, ramen, risottos, sauces
- Add straight to a broth, a slow-cooker dish or rice while it cooks
- Grind to a powder for seasoning: a pinch in a sauce or a vinaigrette
- Steep a few slices in hot water for a clear, fragrant broth
- Organically grown in Ontario
- Dried at low temperature
- Store dry, in a closed container, away from light
