Balsam fir (Abies balsamea) is a star of our boreal forest — it is the tree that smells like Christmas! These needles were hand-harvested in Sainte-Agathe, in the Laurentians, in 2024, by Étienne Bovo, then gently dried to keep their green colour and their fragrance.
The scent is the boreal forest itself: resinous, fresh, a little sweet, with a lemony base. Infused, fir gives a clear, golden drink with a soft, slightly tart forest taste.
Common uses:
- Infusion: 1 tablespoon of needles per cup of very hot water, steep 10 minutes, covered. Excellent with a little honey.
- Cooking: crush and use as an herb on fish, game and potatoes; infuse in a syrup or a dessert cream.
- A small bag of needles on the nightstand or in a drawer, for the scent
- Burned on charcoal with our resins, to perfume the house
