A superstar of our beautiful local flora! Leafy nettle tops (Urtica dioica), hand-harvested in fall 2024 and gently dried: fresh, deep green, with a scent of grass and cut hay.
Infused, nettle gives a green drink with a vegetal, slightly salty taste reminiscent of spinach and green tea. Drink it hot or cold.
Amount: 1 tablespoon of crushed plant per litre of water. Do not boil nettle: heat it with the water and remove from the heat before it boils, then steep 10 minutes.
Cooking suggestion: crumble a little nettle in your hand and sprinkle it on dishes just before eating — soups, pasta, eggs, rice, salads. It lifts the flavour with a green, umami note. You can also blend it into salt, or fold it into a pesto, an omelette or a bread.
