Ingredients to discover

Chamomile flowers (Matricaria chamomilla), grown in Québec. These small flowers with yellow hearts and white petals are picked in bloom, then gently dried to keep their soft, honeyed, faintly apple-like fragrance.

Infused, chamomile gives a golden, rounded, sweet drink, with a hint of elegant bitterness if you let it steep long. It is the evening infusion par excellence, hot with a little honey, or iced with lemon.

Preparation: 1 tablespoon of flowers per cup of very hot (not boiling) water, steep 5 to 10 minutes, covered.

Other uses:
- In the kitchen: infuse in milk or cream for a dessert; as a syrup for cocktails
- Blended with our lavender or rose flowers for a floral infusion
- A handful in the bath, in a cloth sachet, for the scent
- Cooled infusion as a final rinse for blonde hair
