Ingredients to discover

Eastern hemlock (Tsuga canadensis) is a much-loved botanical companion — and one of the most beautiful trees of our forests, with its supple branches and tiny needles. These dried needles are hand-harvested in Québec, then gently dried to keep their fragrance.

The scent is lemony and resinous, finer and fruitier than fir. Infused, hemlock gives a clear, golden drink with a fresh, slightly tart taste reminiscent of a forest green tea. Delicious hot or iced, plain or with honey.

Common uses:
- Infusion: 1 tablespoon of needles per cup of very hot water, 10 minutes, covered
- Extraction in your solvents: oil macerate, tincture, syrup, flavoured vinegar
- Cooking: crush and sprinkle on fish or vegetables; infuse in a syrup for cocktails
- Burned on charcoal, to perfume the house
